Inspired Breakfast

So often I find myself struggling with what to eat for breakfast. Breakfast is my favorite meal, but I get tired of the same thing …yoghurt and granola, poached eggs, smoothies etc.  Last winter I had the good fortune to travel around Hong Kong and parts of Southeast Asia. I kept a photo journal of my #asianbreakfast which I will share with you. However, I haven’t found any of those recipes particularly easy to imitate. Recently, I frequented a restaurant in Boulder where I had avocado toast for breakfast. I found it so tasty and satisfying.  More importantly, it is quick , precisely 6 minutes, and easy. I call it the Boulder Breakfast.

Recipe for The Boulder Breakfast

Avocado Toast, Six Minute Egg and Steamed Greens

Put an egg in a small pan, cover it with cold water. Bring it to a boil, then lower to rolling simmer. Put on a timer for 6 minutes.

Last two minutes of simmer place a vegetable steamer over the egg pot, put in a handful of greens and let steam to your satisfaction.

Place the egg under cold water and peel when cool. Cut in half and season with salt and pepper. Put the greens on the side and season with salt and pepper, maybe some balsamic vinegar.

Cut a ripe avocado in half. Spoon one half into a bowl and mash with a fork. Add sea salt, fresh pepper and 2 teaspoons of balsamic vinegar.

Place two slices of bread of your choice in the toaster. When it pops up, brush the toast with olive oil. Put the avocado mash on the two pieces of toast . Voila!
